  6. Spray cooking spray in a baking dish and layer fried plantain, (I planned for 2 layers) add the first batch of fried tomatoes sauce on top of the plantain and pour the first batch of milk, place the final batch of plantain on top of the first batch and add the remaining tomatoes sauce and pour the remaining whisked egg
  7. Send the baking dish into the oven for 10mins, remove from oven and garnish with fresh parsley leaf.
