This easy, one-bowl, no-mixer orange cake is a huge eye-opening kind of cake for me. Best advice I can give when it comes to the cake batter: Do not overmix. A high degree of gluten development from over-mixing would result in a dense cake. Additionally, the use of cake or pastry flour (lower amount of protein) is a good alternative to all-purpose flour.
Steps to make Olive Oil-Orange & Oats Upside-Down Cake Without Any Glaze:
- Always sift the Dry Ingredients altogether, 2/3 times & then, mix the Zests to it & keep aside
- In another bowl beat the eggs until foamy & then add in the sugar and beat well again until it's soft peaks formations
- Now, in the Dry ingredients bowl mix the EVOO & orange juice nicely until all well combined and incorporated
- Once the batter is ready- Take your choicest shape/size pre-greased & pre-lined baking tray with the parchment paper & @it's bottom lay out the thin sliced orange roundels as is seen in the pics & then pour in the entire batter to it
- Tap the baking tray a few times to release the trapped air inside and the batter to sit well & put it inside the preheated oven @170C for about 30-40 mins time or until it successfully passes the clean toothpick/knife test
- Once baked- Take it out, allow it to cool completely & then flip it onto it's bottom side (refer the pics), garnish with the sprinkled icing sugar and orange slices/zests, etc. according to your choice
- Since, this is called the UPSIDE DOWN CAKE It’s to be served: at it's bottom part as the UP & top most part at it's DOWN
- Who’s gonna have that now…?! Well, I simply just can’t wait to have it…
A high degree of gluten development from over-mixing would result in a dense cake. Additionally, the use of cake or pastry flour (lower amount of protein) is a good alternative to all-purpose flour.
